I liked that the authors noted and respected that the diet is not appropriate for everyone. They provided great tips for transitioning to a vegan diet at a reasonable pace and helpful information for eating out. Some of their rationale for becoming vegan (particularly the religious content) was shaky, but again, they said it's not for everyone, and if it helps move people to a healthier way of life, that's great.I think that this cookbook shines in the areas of the vegetable casseroles and soups. There are also a wide variety of smoothies, juices and desserts, along with some gluten-free options.I had trouble with the timing rhythms of some of the recipes: one recipe had you cook a shorter-cooking grain completely and then start a longer-cooking one, rather than starting the one that takes longer and, once it was going, start the shorter-cooking one. Preachy but comprehensive By Micah At first I could not help but notice that this book spends the first several pages getting away with uncited claims by using vague dialogue dominated by the sentiment that veganism is simply a better set of choices than the ones you’re currently making. However, once the author started to address the mechanics of a vegan diet the cookbook brought me back on board with helpful tips on snacking and substitutions, how to eat with friends and family, and recommended appliances to help ease the burden of transition. The book even helps you with a mock grocery list, which I found to be very practical and filled with delicious options that won’t scare off the majority of carnivores on the fence.The recipe section was surprisingly accessible. With the exception of a few ingredients that might warrant a trip to the grocery store, I found that the vast majority were very user friendly, especially if you shopped from the list they provided.
